How to make Stuffed Acorn Squash

Now that we are finally into the Fall crisp weather, I can not wait to dive into some delicious fall dishes to enjoy until my heart is content!

Perfect for the Autumn weather is an easy and yet delicious recipe on how to make stuffed Acorn squash that consists of apples, pecans & sausage & flavored with brown sugar and maple syrup and topped with parmesan cheese.

How to Roast Acorn Squash Seeds-Linen and Wildflowers

Comfort food on a crisp fall day always makes a good meal & can be made in under an hour. Not only is Acorn squash delicious, but is very nutritious and loaded with nutrients.

Ingredients

  • 2 Acorn Squash, halved
  • Olive Oil
  • Salt & Pepper
  • 1 lb Sausage
  • 2 Granny Smith apples, peeled & diced
  • 2 tbl dark brown sugar
  • 1/2 c dries cranberries
  • 3/4 c chopped pecans
  • 1/4 c maple syrup
  • 1 cup Parmesan Cheese

Directions

  •  Preheat oven to 400 degrees.
  • Using a sharp knife, cut off each end of the acorn squash, then cut it in half.
  • Spoon out seeds.
  • Brush olive oil inside and on top of Acorn Squash.
  • Sprinkle Salt and Pepper over Acorn Squash to taste.
  • Bake for 40 minutes to an hour. 

Tip: you can pierce with a fork but still hold its shape.

While the Acorn Squash is baking

Begin sautéing the sausage for about 5 minutes, drain and pat dry with a paper towel to remove as much grease as possible, but don’t discard oil in the skillet.

  • Using the grease from the sausage, add your onions and celery to the pan and sauté for another 2-3 minutes until it starts to brown. (add olive oil if necessary)
  • Add apples and sauté for another 2 minutes or until softened.
  • Add ¾ cup parmesan cheese and stir until cheese begins to melt. Set aside.
  • Once the squash has finished baking and reached desired tenderness, spoon in the meat mixture until the squash is filled.
  • Return to the oven and bake for an additional 15-20 minutes, depending on the size of the squash.
  • Remove from oven and top with remaining parmesan cheese.

This recipe for Acorn Squash makes a great meal by itself.

Can you freeze Stuffed Acorn Squash?

You sure can. Place in a container & freeze for up to six months.

How long can Acorn squash stay in the refrigerator?

Acorn Squash will keep for about 2-3 days.

Notes

Tip: you can pierce with a fork but still hold its shape.

I used a cast-iron skillet for this recipe, however, a baking sheet will do fine for it.
