  • 1 cup or 2 sticks of Cold Butter (cubed)
  • 1 cup + 2 tablespoons Brown Sugar
  • 2/3 cup White Sugar
  • 2 large Eggs
  • 1 teaspoon Pure Vanilla Extract  (not imitation)
  • 2 1/4 cup All-Purpose Flour
  • 1 1/2 cup old-fashioned rolled oats
  • 1/2 teaspoon Cornstarch
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 cups Sweetened Dried Cranberries (such as Craisins)

Instructions

  1. Preheat oven to 365 degrees.
  2. In the mixer, mix the butter brown sugar, and sugar for 2-3 minutes on medium speed or until light and fluffy. Halfway through mixing, scrape the bowl to ensure the cream mixture is even throughout.
  3. Add the wet ingredients, eggs, and vanilla and cream for 1 minute longer. 
  4. In a separate bowl, combine the dry ingredients, flour, cornstarch,  salt, baking soda, and rolled oats.
  5. Stir in flour mixture and Oatmeal.
  6. Fold in dried cranberries.
  7. Drop round balls of dough onto a light-colored baking sheet pan.
  8. Bake for 10-12 minutes or until the edges turn a light golden color.
