I recently received a very large zucchini from a garden, and I knew I wanted to find a delicious way to use it. Rather than letting it sit on the counter while I figured out what to make, I decided to turn it into this simple Roasted Garlic-Parmesan Zucchini.

Since large zucchini can have tougher skin and a large, seedy center, I peeled most of the skin and scooped out the seeds before cutting it into pieces. Once roasted with garlic, Italian seasoning, olive oil, and Parmesan cheese, the oversized zucchini turned into a tender, flavorful side dish that was just too good not to share.

For the best flavor, I recommend using good-quality Italian seasoning and freshly ground black pepper. I especially enjoy buying spices from a local bulk-food store, Amish market, or small specialty shop when I can.

Fresh spices tend to have a much better aroma and flavor than spices that have been sitting in the pantry for years. Of course, your favorite grocery-store spices will work just fine, too.

Freshly grated Parmesan melts beautifully and adds so much flavor. If you only have the grated Parmesan from your pantry, you can certainly use that in a pinch.

  • 2 zucchini very large
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • ½ teaspoon salt

  • 1 tablespoon fresh parsley chopped, optional

  • Wash the zucchini and trim off both ends. Because very large zucchini can have tougher skin, peel most of the skin away. You can leave a few narrow strips of skin if you like. Cut each zucchini in half lengthwise.
  • Use a spoon to scoop out the large seeds, or a knife to cut out the large seeds and the soft, spongy center. You don't have to remove every bit of the center, but removing the watery, seedy portion will give you firmer zucchini pieces after roasting.
