When we shop, we always get an abundance of bananas. But there are times we have a few ripe ones on hand. So instead of wasting them, I will whip up a loaf of banana bread. The three easy recipes for banana bread I am sharing with y’all are so delicious.

Banana Bread

We always have an abundance of ripe bananas on hand. If we are not baking, we will freeze them for later use for Banana bread. This easy recipe for Banana bread is so easy to make & a delicious quick snack to have at any time of the day with commonly used staples from the pantry.

  • 1/2 c Unsweetened Cocoa Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Baking powder
  • 1/2 c Butter (softened)
  • 1/4 c Brown sugar
  • 1/2 c Granulated sugar
  • 2 eggs
  • 1 1/3 c mashed bananas (4 small bananas)
  • 1 c semi-sweet chocolate chips

Instructions

  • 1/4 c half & half
  • 2 tbsp brown sugar 1 1 1 tsp butter
  • 1/2 tsp Vanilla extract
  • 1/3 c semi-sweet chocolate chips

1. Preheat oven to 350F. Grease a 9×5 in loaf pan generously with non-stick cooking spray.
2. In a large bowl, combine flour, cocoa powder, baking soda & baking powder.  Mix well & set aside.
3. In a medium bowl, cream together the butter, white and brown sugars, eggs, and bananas

4. Mix the dry ingredients in with the wet ingredients. Fold in the chocolate chips

5. Pour in a loaf pan and bake 45-50 or until toothpick comes out clean

TOPPING:

Heat the half and half and brown sugar in a medium saucepan over medium heat until the sugar is dissolved and the mixture begins to bubble around the edges, stirring often. Stir in the butter and vanilla until combined. Remove the saucepan from the heat and add in the chocolate chips, whisking until melted. Pour the chocolate glaze into a small bowl and set it aside to cool completely. Once cooled, drizzle the glaze over top of the chocolate banana bread.

Here is a tip! If you can not bake right away, freeze the ripe bananas for later use!
